Ingredients:
- 1 oz Five Saints Absinthe Americane
- 3/4 oz fresh lemon juice
- 3/4 oz simple syrup
- 1 egg white
- 2 raspberries (plus 1 for garnish)
- Ice
Steps:
1) Add Absinthe Americane, lemon juice, simple syrup, egg white, and 2 raspberries to a shaker.
2) Dry shake (no ice) vigorously for 15–20 seconds to emulsify and build foam.
3) Add ice and shake again until well chilled.
4) Double strain into a chilled coupe glass.
5) Garnish with a raspberry on a cocktail pick (or float it gently on the foam).
